Front Back
What is starch?
A plant polysaccharide
Starch is so abundant that it comprises what percent of a potato?
60%-80%
What 2 things is starch really made of?
Amylose and Amylopectin
What are Amylose and Amylopectin both composed of?
Repeating units of glucose joined by glycosidic bonds
How do Amylose and Amylopectin differ?
In their branching pattern
What 2 things is starch a rich source of?
Carbon and simple sugars
What is Amylase?
An extracellular enzyme that catalyzes the hydrolysis of amylose and to a limited extent, amylopectin
What does the Amylase enzyme break?
Glycosidic bonds to produce maltose (disaccharide), glucose, and short-chain polysaccharides
Once they are broken into smaller components, what can they do?
Diffuse more rapidly through the medium and be transported into the cell
These small carbohydrates are excellent sources of what and do what?
Carbon and they feed directly into the respiratory pathways of bacteria
How is starch agar made?
By adding soluble starch to a general growh medium, like nutrient agar
The soluble starch dissolves in the medium and is or is not visible in the agar?
Is NOT
What are starch plates inoculated with?
Organism of choice then incubated for 24 to 48 hours
Is starch visible in the medium?
No
Since is starch is not visible, what do we need to do?
Add a reagent to identify the presence or absence of starch in the agar
