White blood cells are your body’s internal police force. They patrol the blood, checking up on the cells they encounter and making sure that they all belong in your body. There are many different types of white blood cells, all designed to target a different kind of invader. Lymphocytes, probably the most famous type, target cancer cells and cells that have been hijacked by viruses. They check the cells out using antibodies, or special signaling proteins in the cell membrane, and if the antibodies are wrong the lymphocytes go lethal, killing the other cell with special cytotoxins, or cell-killing poisons.

Sometimes, the white blood cells react too strongly to foreign invaders, and may go on a killing rampage that damages healthy cells. This is called an “autoimmune” disorder, and it can leave you extremely sick. People with celiac disease, for example, can’t eat anything with wheat in it, or their lymphocytes will flip out and give them severe digestive symptoms by attacking healthy cells.
